Lately, I’ve been viewing YouTube videos in the culinary space for some new recipe inspo. I stumbled upon this Garlic Parmesan Rice Takes This Chicken Scampi to the Next Level video on @AllWingsEverything’s page and decided to give it whirl. The end result? A PERFECT 10.
Ingredients:
1 package of chicken breasts
1 1/2 cups rice
Juice of 1 lemon
1 teaspoon garlic powder
1 1/2 teaspoon Adobo seasoning
1/2 teaspoon black pepper
1/4 cup Parmesan cheese
3 cups chicken broth
4 garlic cloves minced
2 tablespoons olive oil
1/4 cup to 1/2 cup butter
1/2 cup white wine
Preparation:
Cut up the chicken breasts into tenderloins and season with garlic powder, Adobo seasoning and black pepper. Cook chicken in olive oil until cooked through. Remove chicken from pan and set aside. Melt butter in pan and add chopped garlic for 2 to 3 minutes — do not let garlic burn. Add white wine and lemon juice. Stir and cook for 5 minutes until liquid reduces to half the amount. Set aside a few tablespoons of the garlic butter sauce on the side for later. Now, add rice and cook for 3 to 4 minutes until it turns brown. Once rice turns brown, add chicken broth and salt and bring to a low boil. Cover pan, reduce heat and let rice cook for 15 to 20 minutes. Stir 2 to 3 times. Once rice is cooked, add chicken on top and drizzle with your reserve garlic butter sauce. Lastly, sprinkle with fresh Parmesan cheese. Enjoy!
