Ooey, gooey and garlic-y, my garlic parmesan chicken meatloaves will change your dinner game! Made with ground chicken, garlic and parmesan, this dish is a delicious twist on traditional meatloaf. The best part? It’s perfect for a quick and easy weeknight meal.
INGREDIENTS:
1.5 pounds ground chicken
1/2 cup freshly grated Parmesan cheese
1/2 cup bread crumbs
1/4 cup parsley chopped
4 to 5 garlic cloves minced
1 egg
1 teaspoon dried oregano
1/4 cup Milk
salt & peppers to taste
2 tablespoons olive oil
1/4 cup Grated Mozzarella cheese
PREPARATION:
Preheat oven to 375 degrees. Mix ALL of the ingredients above in a bowl with the exception of the mozzarella cheese. Form the chicken mixture into 4 to 5 mini loaves or the shape of your liking (meatballs couldwork too!). Place on a parchment paper-lined tray. Drizzle with olive oil. Bake at 375 degrees for 25 to 30 minutes until fully cooked. Add the mozzarella cheese for the last 5 minutes for that gooey cheesy yumminess.
