Craving a vegetarian dish tonight? Look no further than my mom’s kolokithokeftedes (zucchini fritters). Crunchy on the outside and cheesy on the inside, I crave these when I have a hankering for a crispy veggie meal. For smaller servings, you can always halve this recipe. Here’s my mama’s tried-and-true recipe hailing from Greece:
- 6 large zucchini grated with a large cheese grater and drained
- 6 tablespoons dill, chopped
- 1 bunch (about 8) scallions, white and light green parts finely chopped
- 1 1/2 cups crumbled feta
- 4 large eggs, lightly beaten
- 1 cup flour (plus more if mixture is watery)
- Salt and pepper
- A few chopped fresh mint leaves
Mix all of the above ingredients together. Let sit for at least half an hour so mixture thickens. Heat olive oil in a large skillet over medium high heat. Fry patties until golden brown on each side and cooked through, about 2-3 minutes per side. Opa!
