This recipe from my mama is just the thing for the cheesy, buttery lover in you. Yep, I’m talking about Greek feta cheese pies AKA tiropita. I recently made these for my daughter’s heritage day at school and the kids loved them, obvi! You can make these in triangles (YouTube is your friend) or like a cake (by layering the fillo sheets). Paula Deen would be proud with the copious amounts of butter in this dish — rendering it sinfully delicious.
Here are the ingredients:
♥ 3 eggs
♥ 1 box of fillo sheets defrosted
♥ 24 oz. ricotta cheese (OR cottage cheese – depends on your preference)
♥ 1/2 pound of feta cheese
♥ 1 tsp. pepper
♥ 1/2 stick of butter and a dash of oil melted together
How to make:
Mix feta cheese, ricotta cheese, eggs and pepper together. If you make triangles, cut the fillo roll into four pieces. Melt your butter and oil and brush each fillo sheet with this mixture. Add a teaspoon of the cheesy mixture and fold away! If you make a rectangular shaped pie, coat the bottom of the pan with butter. Add fillo sheet, brush with butter and layer with cheese mixture. Bake at 350 for 45 minutes or until golden brown on top. Opa!
Sounds delicous. Maybe I will try it in a gluten free version.
