INGREDIENTS
- 2 lbs. Yukon Gold potatoes – not too big
- 1 teaspoon of oil
- 3 tablespoons melted unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon salt and black pepper
- 2 tablespoons grated parmesan cheese
- 1 tablespoon Italian seasoning
- 1 tablespoon fresh chopped parsley
PREPARATION
Place potatoes in a pot of salted water and cook the potatoes for 30 minutes. Next, flatten the pre-boiled potatoes with a potato masher or the bottom of a short glass. Drizzle the cooked smashed potatoes with a mixture of melted butter, salt, pepper, minced garlic, parmesan and Italian seasoning. Finally, broil the prepared potatoes until golden and crispy for about 10-15 minutes. Simple!
