You’re hungry. But you’re craving something warm and hearty. But hold the protein! What’s a gal or guy to cook? Lentil soup. Le duh! This is an adaptation of my mama’s lentil soup recipe (she holds the chicken broth and goes true vegetarian):
INGREDIENTS:
1 bag of dried lentils (rinsed!)
1 whole sweet onion, chopped
2 carrots, chopped
1 stalk of celery, chopped
2 cubes of chicken broth
1/2 cup olive oilÂ
2 bay leaves
4 cups water
PREPARATION:
In a large pot, heat up enough olive oil to coat the bottom. Sauté the chopped onions, carrots, celery and chicken broth cubes. Once the onions are translucent, add lentils. Cover with water and add bay leaves and salt to taste. Reduce heat, cover and simmer until lentils are tender and soup gets thick. Add more water if necessary. Enjoy!
