Cook This: Slow Cooker Korean Pork Tacos

My crony Liana recently made Slow Cooker Korean Pork Tacos for my husband and I — and we were IMPRESSED. Sweet and salty, this dish is easy to make in a Crock Pot or Insta Pot (linking my faves below). This recipe actually makes a big batch of pulled pork, which is perfect for enjoying tacos one night and freezing some for another night. Here goes! 

INGREDIENTS:

3 lbs pork loin or butt/shoulder roast

½ cup light or dark brown sugar

½ cup soy sauce

2 tablespoon freshly grated ginger

1 tablespoon rice vinegar

5 garlic cloves

PREPARATION:

Whisk the brown sugar, soy sauce, grated ginger and vinegar in a bowl. In a frying pan, sear the pork loin with oil on each side for a caramelized crust. Place pork in a slow cooker. Pour soy sauce mixture over the top. Add the garlic cloves. Cover with lid and cook on low for 7 hours, on high for 4 hours. Shred pork slightly into large pieces and continue to cook uncovered for an additional 30 minutes. Serve with flour tortillas and cole slaw.
