Cook This: Slow Cooker Korean Pork Tacos

My crony Liana recently made Slow Cooker Korean Pork Tacos for my husband and I — and we were IMPRESSED. Sweet and salty, this dish is easy to make in a Crock Pot or Insta Pot (linking my faves below). This recipe actually makes a big batch of pulled pork, which is perfect for enjoying tacos one night and freezing some for another night. Here goes! 

INGREDIENTS:

3 lbs pork loin or butt/shoulder roast

½ cup light or dark brown sugar

½ cup soy sauce

2 tablespoon freshly grated ginger

1 tablespoon rice vinegar

5 garlic cloves

PREPARATION:

Whisk the brown sugar, soy sauce, grated ginger and vinegar in a bowl. In a frying pan, sear the pork loin with oil on each side for a caramelized crust. Place pork in a slow cooker. Pour soy sauce mixture over the top. Add the garlic cloves. Cover with lid and cook on low for 7 hours, on high for 4 hours. Shred pork slightly into large pieces and continue to cook uncovered for an additional 30 minutes. Serve with flour tortillas and cole slaw. You can always serve with rice noodles, too, if tortillas aren’t your thing.
