Cook This: Greek Meatballs

This recipe? So good it makes me wanna smack yo’ mama! As a kid, Greek meatballs came in second place right after my mama’s stuffed peppers. I whip up a batch once a week because they’re low-carb and full of flavor. Plus, the husband is all about ’em and we all know that the way to man’s heart is through his belly and penis. So here’s my recipe as adapted from my mom, Fotini Andy:

1 and a half pounds of organic ground beef

1 whole onion (chopped)

3 cloves of fresh garlic (sliced)

1 cup gluten-free bread crumbs

2 eggs

3 mint leaves (chopped)

salt and pepper to taste

flour

Mix all of the above ingredients. Now, roll the mixture into small balls and dredge them in flour for a crispy exterior situation. Fry ’em up in two batches with lots of olive oil. Serve with tzaziki sauce for extra fanciness!
