Cook This: Greek Lemon Potatoes

Crispy on the outside, fluffy on the inside with a delicious lemony flavor, my Greek lemon roasted potatoes recipe is the perfect side dish to any meal. The key to this Mediterranean classic boils down to two things: Time (I roast for at least one and a half hours) and using Yukon gold potatoes (they are sweeter).

INGREDIENTS:

1 bag Yukon gold potatoes

4 FRESH lemons

Parsley flakes seasoning

Garlic salt seasoning

Olive oil

PREPARATION:

Wash and slice potatoes to your liking. Place sliced potatoes atop a sheet pan lined with parchment paper (for easier cleanup, natch). Drizzle with copious olive oil and fresh lemon juice. Season with parsley flakes and garlic salt. Bake at 350 degrees for 1 hour. Next, mix around with a spatula and sprinkle with more fresh lemon juice. Bake for an additional half hour. Serve with your choice of protein or salad. Opa!
