The verdict is in: My corn casserole side dish is always the undefeated hit of Thanksgiving. Fret not, as I am about to share this super easy and delicious recipe with you all. I double the recipe below to feed my large family and cook it in a large baking tray.
INGREDIENTS:
1 box of Jiffy cornbread mix (or the Honey cornbread mix for a sweeter iteration)
8 oz. of sour cream
1 stick of melted butter
2 eggs
1 can creamed corn
1 can plain corn
DIRECTIONS:
Mix all of these ingredients together. Place in a 9-by-13 baking dish (sprayed with Pam or butter) and bake for an hour at 350 degrees (until golden brown on top). Enjoy!
