Today it was chilly out (okay, it’s 58 degrees in Miami and I wore Uggs and I regret nothing) so my belly was telling me, “Cook me something hearty, savory and piping hot!”
Bolognese sauce it is, belly!
INGREDIENTS
1 package of grass-fed ground beef
1 whole carrot (chopped)
1 yellow onion (chopped)
3 tablespoons of tomato paste
1 can of crushed tomatoes
1½ tsps Calabrian chile paste
2 tsps of worcestershire sauce
fresh Parmesan cheese
2 pinches of sugar
In a large pan, heat 4 teaspoons of olive oil on medium-high until hot. Add the beef and sliced carrots; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 4 to 5 minutes, or until browned. Add the diced onion; season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until slightly softened and the beef is cooked through. Add the tomato paste and chile paste. Cook, stirring frequently, 1 to 2 minutes, or until thoroughly combined. Add the crushed tomatoes, sugar and worcestershire sauce; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until thickened. Turn off the heat. Taste, then season with salt and pepper if desired. I always serve with freshly Parmesan cheese because it looks fancy and adds some more saltiness to the dish.
