This oven-baked twist on classic chicken Parmesan is made with thinly pressed ground chicken, coated in golden panko breadcrumbs and topped with just enough sauce and melty mozzarella to keep every bite crunchy, cheesy and perfectly balanced.
INGREDIENTS:
1 package of ground chicken
2 eggs
Italian seasoning to your liking
Flour
Panko bread crumbs
Shredded mozzarella cheese
Your choice of marinara sauce
PREPARATION:
In a bowl, mix the ground chicken and Italian seasoning blend. Place a sheet of parchment paper on counter and coat with a thin amount of flour. Thinly spread the chicken mixture onto the parchment paper in an oval shape. Wash the chicken mixture in an egg bath. Press panko bread crumbs into the chicken mixture. Spray with olive oil or avocado oil. Cover with another sheet of parchment paper and flip the chicken mixture. Next, cover this side in an egg bath and panko bread crumbs. Spray with olive oil. Slide into a baking tray and cook for 30 minutes on 350 degrees. Once golden brown and cooked through, smother in marinara sauce and mozzarella cheese. Bake until cheese bubbles. Mangia!
