Fun fact about me: I nod off to sleep to soothing YouTube cooking videos for dinner inspo because if I have to hear my family grumble, “Meatballs, AGAIN?!” I will lose my mind! Wait, I already have. Le duh. Last night, I unearthed this chicken francaise recipe and gave it a stab — and I have to admit, it’s yummy!
INGREDIENTS
2 chicken breasts
3 eggs
1 lemon
6 garlic cloves chopped
Butter
Olive oil
Flour
Parsley handful chopped
Parmesan cheese
1/4 cup of white wine
1/2 cup chicken broth
Salt and pepper
PREPARATION
Halve the chicken breasts and pound with a mallet until thin. Season with salt and pepper. In a bowl, mix eggs, chopped parsley and shredded parmesan. Dip the chicken breasts in flour. Next, soak the flour-coated chicken breasts in the seasoned egg bath. Over in a frying pan, add olive oil and butter. Heat up the 3 chopped garlic cloves until aromatic. Add breaded chicken breasts and cook through. Once chicken breasts are cooked, put aside. In the same pan, add 1/2 cup of white wine and 1/2 cup chicken broth. Add 3 more cloves of chopped garlic. Let the sauce simmer. Add the juice of 1 fresh lemon. Once the sauce thickens to your liking, you are done! Pour the gravy over the chicken and enjoy.
