Cook This: Pasta alla Vodka Sauce

The only positive result from my teen’s Tik Tok wormholes? Food recipes. Ava recently stumbled across this pasta alla vodka sauce recipe on the addictive social media platform and it’s hands down the best sauce we’ve ever made at home. Here is the 411:

INGREDIENTS:

Fresh garlic gloves

1 box rigatoni pasta

2 tablespoons butter

1 small can of tomato paste

Shot of Vodka

1 cup heavy cream

Salt, pepper, fresh grated parmesan cheese and onion powder to taste

PREPARATION:

Peel your garlic (as much as you want) and add to a pan on medium heat. Cover with olive oil and a dash of salt. Cook on medium high heat for 15-25 minutes or until the garlic is soft and tender.

Remove the garlic from the oil and store in a sealed container. Next, cook 1/2 lb of pasta in salted water until a dente. Reserve 1 cup of pasta water.

Add 2 tbsp of butter to a pan with a dash of the leftover garlic oil. When the butter has melted, add your cloves of confit garlic. Measure with your heart!

Smash the garlic until a paste forms.

Cook the garlic and oil together for a few minutes then add 4 tbsp of tomato paste. Mix well then cook for a few minutes until it has darkened.

Then, add 1.5 shots of vodka. Mix well then add 1 cup of heavy cream. Whisk together and let simmer for 5-7 minutes to let the alcohol cook off. Then add 1/2 a cup more of heavy cream.

Season with salt, pepper, garlic/ onion powder and parsley. Then add your cooked pasta, 1/2 a cup of Parmesan cheese and a dash of pasta water.

Mix well then top with more parm and enjoy!
