Cook This: Chicken Enchiladas

Craving Mexican food? Of course you are! Le duh. If you’re anything like my family then my easy chicken enchilada recipe is just the thing for when you have a hankering for Mexican fare. 

INGREDIENTS

2 chicken breasts or chicken tenders

Maria & Ricardo’s corn tortillas

Green enchilada sauce (I get from online grocer Hungry Root)

Cheddar cheese

PREPARATION

Season chicken breasts with garlic salt and cook in a frying pan until cooked through. Once chicken is fully cooked, place the chicken in a bowl and use an immersion blender to shred it. Spray a baking tray with olive oil. Stuff each tortilla with shredded chicken and place folded side down. Drizzle with green enchilada sauce and copious cheddar cheese. Bake at 350 degrees for 30 minutes. Olé!

Pro tip: If your tortillas break during the folding process, they are too cold. Heat them up in the microwave or leave them out on the countertop to warm up so they don’t crack.
