
Pizza is just one of those foods that always ends up with the sentiment of buyer’s remorse… my stomach ends up in knots and I’m le miz. Luckily for those of us with gluten sensitivity, this cottage cheese pizza crust recipe is just the thing for when you’re craving pizza but not that awful post-pizza feeling. The following yields two pizzas:
INGREDIENTS
2 cups cottage cheese
4 eggs
1/2 cup almond flour
pinch of oregano
pinch of onion powder
pinch of salt
sauce, cheese and toppings
DIRECTIONS
Preheat oven to 400 degrees and line two baking sheets with parchment paper. Whisk together the cottage cheese and eggs until combined. Add in the flour and seasonings and mix again. Divide the mixture evenly between the baking sheets and spread into a large circle resembling a pizza crust OR 1 larger pizza. Bake for 25 minutes. Let cool for a few minutes and top with sauce, cheese and toppings. Bake again for an additional 10 minutes until cheese is golden and bubbly. Let cool for a few minutes and enjoy!
